METODO CLASSICO BRUT

Produced in Castiglione di Sicilia in the Piano Filici district with Nerello Mascalese grapes. 

The choice of the harvest period plays a fundamental role in the success of the entire sparkling process. Sugars, acids and pH are checked almost daily. 

The period of aging in the bottle on the lees exceeds 24 months with a manual remouage. At the disgorgement the sparkling wine does not undergo any dosage.

The topping up is done with the same sparkling wine.

Il perlage is fine and continuous, the nose is intended with hints of bread crust, floral notes and hints of citrusti. 

With a good structure and persistence, of great freshness and elegance, this sparkling wine expresses a strong typicality of the northern slope of Etna.

Great versatility throughout the meal; excellent with a seafood salad and fried fish, seafood-based first courses, traditional Sicilian fish second courses.
