Produced from 100% Nerello Mascalese grapes in Contrada Piano Filici in Castiglione di Sicilia.
The plants from which the grapes come are the result of a Nerello Mascalese clone prephylloxic, already present in the district on a rooted American vine.
The grapes are harvested manually preserving the integrity of the bunches and placed in medium sized boxes.
After a quick transfer to the cellar, the grapes are selected by hand.
Soft destemming follows in order not to compromise integrity of the grapes.
The grapes are placed in a fermentation vat for about 15 days at a controlled temperature.
The Nerello Mascalese manages to give its best over the years and manages to express all its characteristics with a long refinement.
The wine rests for at least 24 months, in exhausted 500-litre Tonneaux that no longer give off hints of wood but allow micro-oxygenation, a slow maturation of the wine.
The last step of the refinement is in the bottle for at least 12 months.
At sight, the wine has an intense ruby red color with garnet reflections.
On the nose, the notes of ripe fruit are evident, going on jam, mainly berries, notes of violet, leather, bitter almond, undergrowth.
Full-bodied, with excellent persistence, great elegance and complexity.
Velvety tannins, proof of the long refinement, but with an excellent acidity that demonstrates the longevity to which the Etna Rosso DOC wines can aspire
